Admittedly, this is already one of my more popular items on Pinterest, and that’s where I found the recipe originally. Who doesn’t love everything Lauren-Conrad related?! (I know it’s not just me!) I love that this smoothie recipe incorporates oats—definitely gives it some staying power!
#2 – Veggie Quesadillas
I love this recipe because it’s versatile and pretty cost-effective too! While I liked the combo of mushrooms, onion, pepper, and zucchini, you could really sub in any veggies that you prefer.
This is an oldie, but goodie! I used to make baked oatmeal quite often and this one is perfect for summertime (you can eat it hot or cold). Who can’t appreciate a breakfast reminiscent of a campfire favorite? (Tip: Make several servings Sunday night and you’ll be set for the entire work week!)
#4 – Asian Salad
This was one of the first recipes I posted when I began my blog (almost 2 years ago!). I got the original recipe from my aunt and I’ve made this many times since. It’s a perfect side dish for summer get-togethers.
Another favorite recipe of mine! If you like stuffed peppers, you’ll love this rendition—it’s got all of the same ingredients and flavors of stuffed peppers, just in a different form.
