Hey everyone & happy Friday/weekend!
I was all set to celebrate my blog’s first birthday today. Then, I looked back to my first post & realized it was written on June 21st. Dang. Better late than never though, right?
Before I get into a quick recap of the past year, I wanted to mention where I was last night since I never got around to posting.
I traveled to Conshohocken (not far outside of Philly) to have dinner with my sister. We went to a Mexican restaurant, Coyote Crossing.
The waiter brought out fresh chips & salsa to get us started, & between the two of us we had no problem polishing off the basket of chips; they were so good. For my entree I ordered the scallops coyote — “Large sea scallops dusted and blackened with our traditional Mexican seasoning, then seared and finished in the oven and served with our mango habanera puree, garnished with our vegetable sauté and rice.”
Scallops are one of my favorite types of seafood, so whenever I see them on the menu that’s usually what I go with. These were cooked perfectly & the rice & veggie sauté were delicious as well.
Now, onto the “blogiversary” recap!
I honestly can’t believe that it has already been a year since I started For the Sake of Cake. It’s truly amazing to see where I started & what the blog has grown to & I couldn’t be prouder or more excited to see how the blog will continue to transform.
A few favorites from the past year…
- The day my mom & I drove to NYC to pick up my wedding dress (& then ate ice cream for dinner… bridal diet of champions!)
- Of course, my wedding!
- I shared my tips for savvy shopping.
- We had a snowstorm in October.
- I attended my first blogger meet-up (& went to another one again in January!).
- I attended the Zella Day of Movement (which I found out about through my position as a FitFluential Ambassador).
- I recorded my first vlog.
Phew! What a year. Thank you so much to those of you who have been reading – whether you’ve been here since the early days or are new to these parts. I truly appreciate your readership, comments, & interactions & hope you’ll stick around to see where year two takes me!
