Hello & happy Wednesday… half-way through the week! Although now that I’m on summer vacation, I’d prefer if the weeks slowed down a bit!

Since one of my June goals was to try out some new recipes in the kitchen, I browsed through one of my old Rachael Ray cookbooks before meal planning this week for some inspiration. I saw a recipe for salmon burgers, & since I had been wanting to try them, I figured no better time than the present!
I wouldn’t even call this a “recipe”… more of a “how to.” Regardless, this is how I went about making salmon burgers…
I simply cut up a salmon filet & ground it up a bit in my food processor. I seasoned the ground salmon with pepper & grill seasoning, then, after forming two patties, cooked them in a skillet for about 6 minutes… it was that simple! Next time, I will probably buy a larger salmon filet to make more than 2 burgers. The one I purchased was just shy of a lb., so if you are wanting to make 4+ burgers, I would go for at least 1.5 lbs.!
In the cookbook I used as a reference, there was also a recipe for a simple sauce to go with these burgers. I didn’t follow any exact measurements; instead, I used the provided recipe as a guideline. I simply mixed equal parts cream cheese & sour cream (about 1 tbsp. each) with one chopped scallion & a squirt of lemon juice. The sauce complimented the salmon quite nicely!
I served the salmon burger on a whole wheat bun topped with some of the sauce & on a bed of arugula. (The side dish is roasted potatoes with ketchup!)
I’m glad that I finally tried salmon burgers because they were both delicious & easy to make. (Side note: I’m sure if you don’t have a food processor, you could process the salmon filet in a blender/Magic Bullet!)
