Thanks so much for all the positive thoughts regarding our house-hunting debacle. I truly appreciate it & I hope that I have some positive news to share soon. Although, based on how things have gone so far, I might not reveal anything until I type a post from our new abode… whenever & wherever that may be!
Today was my first official day of summer break! I started it bright & early with a 6:30AM run. I thought waking up early would help me to beat the heat, but it was surprisingly humid & I was only able to cover just under 1.5 miles before calling it quits. Even though I prefer to run outside, I think I may have to move it indoors if I want to work on increasing my distance & speed.
Breakfast this morning was overnight oats + “homemade” iced coffee. The oats were prepared as usual (2/3 c. oats, 1/2 c. milk, 1 tbsp. Greek yogurt, 1 tbsp. chia seeds), & I added in a few sliced strawberries, almond butter, & honey this morning before digging in.
The homemade iced coffee came compliments of a Green Mountain French Vanilla Brew Over Ice K-Cup.
I’ve used Brew Over Ice K-Cups before, but have never really had much luck actually brewing them over ice as they are meant to be prepared. No matter how much ice I pack into my cup, it always melts immediately. Then, when I add more ice, the beverage remains warm since it was brewed hot from the Keurig.
I came up with a solution that I’m sure is just common sense to most people… I simply brew the coffee the night before, then refrigerate. Simple enough! Even if I forget to brew it at night, the cooling process can be sped up by popping the coffee in the freezer for a little while. I add ice cubes when I’m ready to drink up for a true “iced coffee” & I’m good to go!
After breakfast, Chris & I met with our realtor, then I had a quick doctor’s appointment.
Breakfast did a pretty good job of holding me over throughout the morning, but since grocery shopping was next on the agenda, I knew a snack would be a good idea. I grabbed a mango Chobani, then headed out to Target & the grocery store.
By the time I got home & unloaded the groceries, it was already 2:00PM – long after my usual lunch time.
I threw together a quick sandwich that included a wedge of Laughing Cow Swiss, a few slices of roast beef, & some arugula. The flavor combination was awesome!
On the side, I had some Popcorners for crunch.
Next, I sat down to catch up on my DVR & before I knew it, I woke up with a pug in my lap & a clock that read 5:30PM. We had napped away for a good portion of the early evening! Really though, how could I resist this face?
He loves to sleep & cuddle!
After taking Stewie out for a walk, I did a little bit of laundry & a few odds & ends around the apartment before taking a break to make dinner.
I kept things simple tonight & made penne & meatballs. I started with a salad though to get a little greenery in!
Of course, no meal is complete without dessert, & I satisfied my sweet tooth with a handful of pretzel M&Ms (love these!).
Now, I’m off to finish up a few more “to dos” before hopefully settling in for an early bed time! My return to 6:00AM BodyPump is planned for tomorrow; I love being able to workout in the morning!
