Weekday Cookout

Hey everyone!

Tonight’s post is going to be a quick one. Chris & I will be heading to Baltimore tomorrow afternoon to visit his sister & brother-in-law for the evening, so I need to get a few things in order for the (short!) trip.

Last weekend, when Chris & I were deciding what dinners we wanted for the week, we decided to go for burgers on the grill! The weather has been so nice lately, & absolutely perfect for grilling. (Side note: Is anyone sick of talking about the beautiful weather yet? Because I’m not!)

After taking a short run + walk with Stewie around our apartment complex, Chris & I got to work on dinner. Well actually all I did was put some fries in the oven while Chris manned the grill.

I kept things simple, serving my burger on a whole wheat bun with ketchup + mustard. On the side were some Alexia sweet potato waffle fries.

The rest of my evening was spent in the kitchen whipping up Courtney’s Marbled Irish Cream Cupcakes. In an effort to save time, I’m skipping out on the homemade frosting (I’m sure it’s amazing) & fancied up some store-bought cream cheese frosting with Irish cream liqueur. I’ll let you all know how it turns out! :-)

Now, off to frost those cupcakes…

      lol there he is! He did, of course, make an appearance in my wedding posts, but he’s not big on the random “candid” shots! :-)

    My favorite food from the grill is chicken. I much prefer chicken cooked on the grill than any other way. Second to chicken would be burgers and hot dogs – summertime is all about burgers and dogs on the grill!
