Simple Saturday

I hope everyone is having a nice, relaxing weekend. Here’s a run-down on what I’ve been up to.

First thing this morning, I headed off to the gym for 8:30AM spin class. After class, the instructor noted that we should re-fuel with protein + carbs & water. To follow her suggestions, I had the following for breakfast:

 2 eggs, scrambled + toast with butter & jelly

      coffee + water

After downing breakfast, I took a bit of time to do some blog reading before gearing up to clean. I decided that I was still a little hungry, even after breakfast, so a blood orange Chobani with 1 tsp. chia seeds was enjoyed as a snack.

I spent the next few hours cleaning. For some reason I really got on a roll today & even went so far as to vacuum our furniture, wipe down cabinets, & do other “once-in-a-while” tasks.

When I finished cleaning, I was starving again, so I made a tuna wrap & enjoyed some Kettle Brand baked chips on the side.

The wrap consisted of:

  • 1 wedge Laughing Cow Swiss cheese
  • 1 can of tuna, mixed with 1 tsp. light mayo
  • A few spinach leaves

Side note: Kettle Brand baked chips are awesome. Unlike other baked chips, these taste like real potato chips, only they have “65 percent less fat than regular chips, 2 grams of fiber, 3 grams of fat, and only 120 calories per serving.”

What was left of my afternoon was spent doing laundry, writing lesson plans, & watching some TV, including a pre-season Phillies game!

I was on my own for dinner tonight, & didn’t really feel like making anything that required too much effort, so I cooked up some pastina that had been sitting in our cabinet for a while & topped it with a leftover stuffed pepper.

Not really anything to write home about, but it was quick & simple which fit the bill for this evening.

I’m off to do a few more random tasks, then hopefully playing more DVR catch-up (I’m so behind on so many shows!).

What’s your favorite kind of chip? If loving Doritos is wrong, then I don’t want to be right!

    That is one of my fave breakfasts EVER. I am going to have to make it soon :) I could probably eat it everyday, maybe even for dinner too? 😉
