Snow Day

Hope everyone is enjoying their weekends! :-)

So far mine has been… snowy.

Before I get to today’s weather, let’s take a look at last evening’s dinner…

I had a salmon filet that I purchased at the store last weekend & needed to be used. Before baking the salmon in the oven for 20 minutes at 350*, I coated it with a mix of olive oil, lemon juice, pepper, & rosemary (this is how I usually prepare it).

As the salmon was baking, I got to experimenting with a homemade dill sauce. I had seen an easy recipe for dill sauce in a magazine a little while ago (I can’t remember where), but I couldn’t remember much except that it used sour cream. Since I’m a big fan of substituting plain Chobani for sour cream, I did just that. I didn’t keep track of exact measurements, & pretty much just added things to taste.

In the mix…

  • Plain Chobani
  • Lemon juice
  • Pepper
  • Dill weed seasoning

It made a nice compliment to the salmon, which I ate with some brown rice & a side salad.


Of course it’s no secret that the forecast for the northeast for today was snow, snow, & more snow, & that’s exactly what we’ve been experiencing.

When I woke up to get to the gym by 8:00AM, it was just raining, but the flakes started to fall during BodyPump!

I still made it to my nail appointment (can’t miss that 😉 ) & then Chris & I made a quick trip to Target & the grocery store to stock up for the week.

Soon, Chris will be off to do some snow removal, so the rest of my night will consist of:

Chris & I were supposed to go a family birthday party for his brother today, but obviously, those plans were cancelled. They’ve re-scheduled for tomorrow, so I have to force myself to be productive on this snowy night since Sundays usually end up being my “work day.” (FYI – Don’t be surprised if I don’t get around to posting tomorrow; it’s going to be a busy one!)

    Hi EKom! Let me just start out my saying that I love your posts! I always get very excited when I see that you’ve posted one! :)
    There was no snow here in New Jersey, but it sure was chilly! I made use of the seasons drinks and got a pumpkin spice coffee from Wawa and a salted caramel mocha from Starbucks…they were glorious. Haha

      I haven’t tried the pumpkin spice from Wawa yet, but I’ve heard good things about it! I really like Dunkin’ Donuts pumpkin coffee, but Wawa is a 30 second drive for me, so I might have to give it a try soon!

    Your dinner looks delish! I can’t believe all the snow.. it just kept coming.. wonder what the final inch count was.. crazy for October!!

      I would have appreciated the snow 1) if it happened during the week & 2) if it was about a month or two later than it is!

      Wasn’t quite so bad in Reading, at least where I am! The lights (& more importantly HEAT) are still on in our apartment!
