Fall is definitely in the air here in PA. Yesterday was chilly & rainy, & the high today & tomorrow is low-60s/high-50s! I’m a summer girl through-and-through, but the chilly weather has me wanting to build up my cold-weather food recipes.
The recipe calls for browning the lean ground beef, along with the peppers & onions before placing them with the remaining ingredients in the crock-pot. Since I have no time in the morning to brown beef, I did this step last night & the recipe still turned out perfectly fine.
I let it cook away while I was at work, & when I arrived home this afternoon, I turned the heat from “low,” to “warm,” to keep it heated until dinner time.
I topped my bowl with tons some cheese & it was delicious! I seriously love being able to come home from the gym & have a warm meal ready & waiting!
Next time I make this chilly, I may even leave out the ground beef. It was tasty, but the beans really bulked it up, & I’m sure subbing an additional can of beans for the beef would turn out just fine.
Chili just screams “cold-weather comfort” to me for some reason! I was never really a fan of chili growing up, mostly because I didn’t enjoy beans. Now, I’m slowly coming around & beginning to like them.

What are some foods that you hated growing up but enjoy now? Like I said, I was never a big fan of beans. I also hated onions, but now I love incorporating them into my meals. One thing I simply can’t get onboard with? Olives.
