Sunday

Obviously, as you can see from this post’s title, the creativity is really flowing this evening! ;-)

Today was a typical Sunday, which usually looks like this for me:

  • Wake up, walk Stewie, get the paper
  • Make breakfast
  • Shower/get ready/blog reading
  • Church
  • Eat lunch/make grocery list
  • Target & grocery shopping
  • School work
  • Laundry
  • Relax/more blog reading

I offered to make Chris breakfast this morning. He wasn’t feeling well & he had to work for a few hours, so I figured I’d send him off with a full tummy!

I asked him what he wanted in his oatmeal, & he responded with “apple butter.” Interesting…

If you remember, I bought some Trader Joe’s honey apple butter last Saturday. While I thought it was good, Chris has really been loving the stuff!

After his oatmeal was done, I decided to make a batch for myself that looked very similar to the one I ate yesterday, only this time I took a page out of Chris’s book & added some apple butter!

In the mix:

  • 1/2 c. oats
  • 1 tbsp. pumpkin
  • About 1 tsp. apple butter
  • Chopped walnuts
  • Chia seeds
  • Chocolate chips

 

Served with some coffee on the side…

All mixed together…

The melted chocolate chips are my favorite part!

For dinner, my parents invited Chris & I to go along with them & my sister to a local Italian place. Unfortunately, they were going for a late-lunch/early-dinner & it was during my errand running time! Luckily for Chris & I, they offered to drop off 2 meals for us.

Really, I think they just wanted some face-time with you-know-who:

For my dinner, I got an order of ravioli & meatballs, & had a slice of bread (x2) & butter on the side. I only ate 3 of the 4 giant raviolis & 1 meatball so I could have leftovers for lunch tomorrow!

Speaking of tomorrow… while most teachers & students have tomorrow off for Columbus Day, our district has in-service days both tomorrow & Tuesday. Something I’m looking forward to? I don’t have to worry about getting to work quite as early as I do on a normal school day & that means I can whip up something other than my usual English muffin breakfast! Yay! :-)

What would you do with an extra hour in the morning? Workout? Sleep? Make a delicious breakfast?

    Honey Apple Butter from TJ’s— When I lived in NY, the pumpkin butter rocked my socks off! It was my favorite!!!
    I have inservice tomorrow too! I get to wear jeans to work! SCORE! I love when I have to dress up only four days out of the week!!! …As for inservice- no fun but I do appreciate the no planning for that day and no homework to grade either!

      We only get to wear jeans if we don’t have any speakers from outside the district, but unfortunately we do, so I still have to “dress up”!

      I agree — even though in-service isn’t super fun, it’s nice to have a break from the normal routine!

    Your breakfast looks really good! I love adding chocolate chips and chopped walnuts to my oatmeal! :) If I had an extra hour in the morning I would make a nice breakfast! I usually only have enough time to make a bowl of oatmeal and nothing else.

    Oooh that oatmeal looks great! I HEART Trader Joes like nothin’ else! They always have the best, unique kinds of spreads, butters…just interesting combos of food too! Anyway, just discovered your blog from the comments of chocolate covered Katie…noticed we have the same name so I was intrigued :) Look forward to reading more!
